The objective of the course " Economics of sustainable food " of the mention "Economics of the environment, energy and transport" is to offer training dealing with all the questions of the bio-economy, especially agriculture and food from an economic point of view. The training allows students to understand the environmental, health and socio-economic issues related to our food.
The courses cover: economics, statistics and data processing;  the different actors in the food chain as well as the tools to understand their strategies (political economy, industrial economy); the production methods of farmers, the choices of consumers and the decisions of agri-food companies will be explained theoretically and analyzed empirically using modeling tools and data processing (econometrics, behavioral and experimental economics, incentive theory ); the agricultural and nutritional policies implemented and their consequences are developed and discussed through the presentation of economic experiences; the circular economy (eco-design, waste, waste) and the analysis of the life cycle of products (innovation, management, marketing) are approached using case studies and numerous examples.
